Strawberry-Ginger Quick Jam

Ingredients

  • 2 pounds frozen strawberries, thawed
  • 1 1/2 cups sugar
  • 2-inch piece fresh ginger, peeled and grated
  • 1 teaspoon lemon zest

Preparation

In medium saucepan, cook all ingredients over medium-high, stirring occasionally, until mixture begins to boil. Reduce heat to low; simmer until thick and jammy, about 20 minutes. Cool to room temperature. Transfer to airtight container; chill.
