Ingredients

  • 1/3 cup panko
  • 4 tablespoons olive oil
  • 1 cup chopped onion
  • 4 cloves garlic, chopped
  • 1 1/2 teaspoons chopped rosemary
  • 2 cups drained cannellini beans, lightly mashed
  • 8 ounces Andouille or other smoked sausage, sliced
  • 1 cup chicken stock
  • 1/8 teaspoon ground allspice
  • 1 plum tomato, diced
  • 1/4 cup chopped flat-leaf parsley

Preparation

In skillet, stir panko and 1 tbsp. oil over high until panko browns, 2 minutes; season. Transfer to plate. In skillet, cook onion, garlic and rosemary in remaining 3 tbsp. oil over medium, 5 minutes. Add next 4 ingredients and stir until liquid thickens slightly, 10 minutes; season. Stir tomato and parsley into cassoulet; sprinkle with panko.
