Spring Soba Salad

  • 8 oz. soba noodles
  • 6 tbsp. ponzu sauce
  • 1 tbsp. toasted sesame oil
  • 1 tbsp. sugar
  • 1 clove garlic, minced
  • 8 radishes, cut into matchsticks
  • 1 cup shelled edamame
  • 1 cup sliced snow peas
  • 1/4 cup chopped scallions
  • 3 tbsp. sliced fresh basil


Cook noodles according to package instructions. Rinse under cold water; drain. In large bowl, whisk ponzu, oil, sugar and garlic. Toss all ingredients together.

Saucy Tip: If your soba noodles soak up all the dressing, drizzle with an extra splash of ponzu or sesame oil just before serving to moisten.
