Spinach Tabbouleh

Ingredients
- 1 cup bulgur
- 1 onion, sliced
- 2 tablespoons EVOO
- 4 cups baby spinach, chopped
- 1/2 cup walnuts, chopped
Preparation
Cook bulgur according to package directions. In skillet, cook onion in EVOO over medium, stirring often, until very brown, 20 minutes. In bowl, toss bulgur, onion, spinach and nuts; season.
