Spinach-Artichoke Dip with a Kick

  • 5 ounces fresh baby spinach
  • 9 ounces finely chopped, thawed frozen artichoke hearts
  • 3/4 cup shredded pepper jack
  • 1/2 cup grated Parmesan
  • 1/2 cup mayonnaise
  • 1 Thai chile, minced
  • 1 clove garlic, minced
  • Sliced carrots, for serving


Microwave spinach on high until wilted, 1 to 2 minutes; coarsely chop. Mix with artichoke hearts, pepper jack, Parmesan, mayonnaise, Thai chile and clove garlic. Transfer to a 1-qt. baking dish; cover with foil and bake at 375 degrees until browned and bubbling, 25 to 30 minutes. Serve with sliced carrots.
