Spinach & Goat Cheese Frittata

  • 8 large eggs
  • 1/4 cup grated Parmesan
  • 1/4 cup milk
  • 2 tbsp. olive oil
  • 5 oz. baby spinach
  • 4 scallions, chopped
  • 4 oz. goat cheese, crumbled


In bowl, whisk eggs, Parmesan, and milk; season. In medium skillet, heat oil over medium-high. Add spinach and scallions. Cook until spinach wilts and scallions soften, about 3 minutes. Pour egg mixture into skillet; stir gently. Top with goat cheese. Bake at 425° until set, about 15 minutes.
