Spicy Veggie Sliders

Ingredients

  • 1 15 ounce can black beans, rinsed
  • 1 cup plus 2 tbsp. panko
  • 1/2 cup cooked brown rice
  • 1/3 cup chopped onion
  • 1/3 cup chopped green bell pepper
  • 1 chipotle in adobo, chopped
  • 1 teaspoon adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 egg white, beaten
  • 1/4 cup EVOO
  • 1/2 cup tomatillo salsa
  • 2 tablespoons chopped cilantro, plus leaves for garnish
  • 8 slider buns, split and toasted
  • red onion rings

Preparation

In processor, pulse beans, 2 tbsp. panko and next 8 ingredients to blend. Form into 8 balls. Coat veggie balls in egg white, then remaining panko. In medium nonstick skillet, heat EVOO over medium. Cook balls until browned all over, 8 to 10 minutes. Mix salsa and chopped cilantro. Build sliders with buns, balls, salsa, cilantro leaves and onion.
