- 1/2 cup fresh mint, plus sprigs for garnish
- 1/2 cup sugar
- 4 oz .fresh lime juice, plus 4 lime wheels for garnish
- 6 oz. blanco (silver) tequila
- 8 oz. Prosecco, chilled
In food processor, pulse 1/2 cup mint and sugar until combined. In small saucepan, bring 1/2 cup water to a boil over high. Add mint sugar and stir until sugar dissolves; let cool. In cocktail shaker, shake mint syrup, lime juice, and tequila. Pour into 4 ice-filled rocks glasses. Top with Prosecco; garnish.
