Spaghetti Frittata

  • 1/2 cup sliced spring onions or scallions
  • 2 teaspoons EVOO
  • 1 cup cooked spaghetti (or other pasta)
  • 6 eggs
  • 1/2 cup parmesan


In nonstick skillet, cook onions in 1 teaspoon EVOO; transfer to bowl. Add 1 teaspoon EVOO and pasta to pan; cook to crisp slightly. Whisk eggs, cheese and onions; pour over pasta evenly. Cook for 5 minutes to set thoroughly; brown under broiler.
