Ingredients

  • 2 pounds baby Yukon Gold potatoes, quartered
  • 3 tablespoons minced parsley
  • 5 teaspoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup diced roasted red peppers
  • 1/2 teaspoon smoked paprika
  • 1/4 cup minced cured chorizo

Preparation

In pot, cover potatoes with cold salted water. Cook over high until tender, 25 minutes; drain. In bowl, mix next 4 ingredients; whisk in oil. Stir in remaining ingredients; season.
