Smoked Salmon Sushi

Ingredients

  • 8 ounces Neufchatel cheese
  • 2 tablespoons salsa verde
  • 3 scallions, minced
  • 5 8-inch round gluten-free tortillas
  • Smoked salmon, thinly sliced
  • Cilantro leaves

Preparation

In a bowl, mix Neufchatel cheese, salsa verde and scallions. Spread over tortillas. Top each with 1/2 oz. thinly sliced smoked salmon. Roll tortilla and trim ends. Cut into 6 pieces and secure with toothpicks. Stand cut side up and top with a cilantro leaf.
