- 4 hasselbacked (see Tip) sweet potatoes
- 1/2 cup olive oil
- 1 tablespoon smoked paprika
- 2 minced garlic cloves
- Salt and pepper
- Coarsely crumbled cooked bacon
- Chopped flat-leaf parsley
Place potatoes on a foil-lined rimmed baking sheet. In a small bowl, whisk oil, paprika and garlic; season generously with salt and pepper. Brush some paprika oil over the potatoes. Roast at 425 degrees , 25 minutes; brush with more oil. Return to the oven and roast 25 minutes more. Tuck pieces of bacon between every four or five potato slices. Roast until the bacon is heated through and the potatoes are tender, about 10 minutes more. Broil until browned, 1 to 3 minutes. Season; brush with remaining oil. Top with parsley.
