Smashed Red Potatoes

  • 2 pounds red potatoes, cut into 2-inch pieces
  • 1/2 cup milk


Place the potatoes in a large saucepan. Add enough water to cover by 1 inch; bring to a boil. Season with salt, reduce the heat to medium and simmer until the potatoes are tender when pierced with a fork, about 20 minutes. Drain the potatoes, return them to the pot and coarsely mash with a fork or a potato masher. Slowly stir in the milk; season with salt and pepper.
