Shrimp & Radicchio Salad

  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon minced garlic
  • 3 tablespoons EVOO
  • 2 teaspoons minced fresh rosemary
  • 1 head radicchio, torn
  • 1 11 ounce can mandarin oranges, drained
  • 1/4 cup crumbled feta


In large skillet, cook shrimp and garlic in EVOO over medium, stirring, until shrimp is cooked, 5 minutes. In bowl, toss with rosemary; season. Add radicchio and orange; toss and season. Top with cheese.
