Shrimp, Feta & Black Bean Salad

Ingredients
- 3/4 cup crumbled feta
- 6 tbsp. plain yogurt
- 3 tbsp. EVOO
- 2 tbsp. apple cider vinegar
- 10 oz. romaine, chopped
- 1 1/2 cups Tex-Mex Black Beans, thawed
- 12 oz. peeled, deveined cooked shrimp
- 2 1/4 cups coarsely crumbled pita chips
- 8 stemmed and sliced pepperoncini
- 1/3 cup fresh mint leaves
Preparation
1. Make Big-Batch Tex-Mex Black Beans and portion out 1 1/2 cups for this recipe.
2. In a blender, puree feta, yogurt, EVOO and vinegar. In a bowl, toss with romaine; season. Divide among 4 bowls. Top with Tex-Mex Black Beans, shrimp, pita chips, pepperoncini and mint.
