Ingredients

  • 3/4 cup crumbled feta
  • 6 tbsp. plain yogurt
  • 3 tbsp. EVOO
  • 2 tbsp. apple cider vinegar
  • 10 oz. romaine, chopped
  • 1 1/2 cups Tex-Mex Black Beans, thawed
  • 12 oz. peeled, deveined cooked shrimp
  • 2 1/4 cups coarsely crumbled pita chips
  • 8 stemmed and sliced pepperoncini
  • 1/3 cup fresh mint leaves

Preparation

1. Make Big-Batch Tex-Mex Black Beans and portion out 1 1/2 cups for this recipe.

2. In a blender, puree feta, yogurt, EVOO and vinegar. In a bowl, toss with romaine; season. Divide among 4 bowls. Top with Tex-Mex Black Beans, shrimp, pita chips, pepperoncini and mint.
