Shaved Kohlrabi Salad with Arugula & Parmesan
This restaurant-worthy dish takes 15 minutes to make at home.
Ingredients
2 tbsp. EVOO
1 tbsp. honey
1 tbsp. white wine vinegar
1/2 tsp. lemon zest plus 2 tbsp. juice
3 small kohlrabi (about 2 inches wide), peeled and thinly shaved on mandoline
4 cups baby arugula
1 cup shaved Parmesan
1/4 cup torn fresh basil
Preparation
In bowl, whisk oil, honey, vinegar, and lemon zest and juice. Season dressing. Toss half of dressing with kohlrabi. Layer kohlrabi on plates. Toss remaining dressing with arugula, cheese, and basil; season. Divide among plates.
