Sautéed Green Beans with Red Onion

If the green beans aren’t just out of the skillet come dinnertime, don’t fret. This is the kind of side that’s great warm or at room temperature. Cool beans!

  • 2 packages (12-oz. each) trimmed green beans
  • 2 tbsp. olive oil
  • 1/2 large red onion, chopped
  • 2 tsp. chopped fresh oregano


In a large skillet, bring 1 inch of water to a boil. Salt the water and add the green beans. Cover and simmer until crisp-tender, 3 to 5 minutes; drain. In the same skillet, heat the oil over medium- high. Add the onion and cook, stirring often, until the onion is soft and beginning to brown, 3 to 5 minutes. Add the green beans and oregano; season with salt and pepper. Cook, stirring often, until heated through, about 3 minutes.
