Salted Macadamia Brittle

1 3/4 lb.


  • 1 1/2 cups sugar

  • 1/2 cup light corn syrup

  • 2 1/2 cups raw macadamia nut

  • 2 tbsp. butter

  • 1 tsp. baking soda 

  • Flaky sea salt, for garnish


In medium pan, stir sugar, corn syrup, and 1/2 cup water over medium-high until sugar dissolves, about 2 minutes. Boil, without stirring, until mixture thickens, about 8 minutes. Mix in nuts, butter, and 3/4 tsp. salt. Stir until mixture is amber, 6 to 8 minutes. Mix in baking soda. (Mixture will bubble up.) Pour onto greased baking sheet. Sprinkle with sea salt. Chill until set, about 30 minutes. Break into pieces.
