- 6 eggs
- 1/4 cup creme fraiche
- 2 tablespoons butter
- 4 ounces smoked salmon, flaked into bite-size pieces
- 1 tablespoon chopped chives
In bowl, whisk eggs and creme fraiche. In nonstick skillet, melt butter over medium-low. Add egg mixture. Cook, stirring, until almost set, 2 to 3 minutes. Fold in salmon; season. Sprinkle with chives.
