Dijon Salmon Salad

Ingredients

  • 5 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 tablespoon Dijon mustard
  • 4 6 ounces salmon fillets
  • 3 cups watercress
  • 4 radishes, thinly sliced

Preparation

In bowl, whisk 4 tbsp. oil, vinegar and mustard; season. In skillet, heat 1 tbsp. oil over medium-high. Cook salmon, skin side down, 6 minutes. Turn and cook 2 minutes. Divide veggies among plates. Top with salmon and dressing.
