Salmon & Cauliflower with Chive Crème Fraîche

Ingredients
- 1 medium head cauliflower, broken into florets
- 2 tbsp. olive oil
- 2 tsp. fennel seed
- 4 skinless salmon fillets
- 1/4 cup crème fraîche
- 1 tbsp. chopped fresh chives
- 2 tsp. fresh lemon juice
Preparation
On half of baking sheet, toss cauliflower, oil and fennel; season. Roast at 400°, 10 minutes. Season fish; add to other half of sheet. Roast until flaky, about 10 minutes. In bowl, stir remaining ingredients; drizzle over salmon.
