Rotini with Cauliflower Rice & Sausage
Everything happens in one skillet for this weeknight meal.
Ingredients
3/4 lb. sweet Italian bulk sausage
5 tbsp. olive oil
5 cups cauliflower rice (about 1 1/4 lb.)
1 tsp. dried oregano
1 tsp. garlic powder
12 oz. rotini pasta, cooked, and 1/2 cup cooking water
1/2 cup chopped fresh flat-leaf parsley
1 tsp. lemon zest
Preparation
In skillet, cook sausage in 1 tbsp. oil over medium-high, breaking meat up with a spoon, until browned, about 6 minutes. Transfer to bowl. In same skillet, cook cauliflower rice, oregano, and garlic powder in remaining 4 tbsp. oil over medium-high, stirring often, until crisp-tender, about 4 minutes; season. Stir in remaining ingredients; season.
