Rotini with Cauliflower Rice & Sausage

  • 3/4 lb. sweet Italian bulk sausage

  • 5 tbsp. olive oil

  • 5 cups cauliflower rice (about 1 1/4 lb.)

  • 1 tsp. dried oregano

  • 1 tsp. garlic powder

  • 12 oz. rotini pasta, cooked, and 1/2 cup cooking water

  • 1/2 cup chopped fresh flat-leaf parsley

  • 1 tsp. lemon zest


In skillet, cook sausage in 1 tbsp. oil over medium-high, breaking meat up with a spoon, until browned, about 6 minutes. Transfer to bowl. In same skillet, cook cauliflower rice, oregano, and garlic powder in remaining 4 tbsp. oil over medium-high, stirring often, until crisp-tender, about 4 minutes; season. Stir in remaining ingredients; season.
