Romesco Butter

Pipe Dreams: Spoon the mixture into a piping bag fitted with a star tip (or a resealable plastic bag with a corner snipped off) and squeeze onto parchment. Chill until firm.

  • 10 tbsp. butter
  • 1 tbsp. tomato paste
  • 1/4 tsp. saffron threads
  • 1/3 cup chopped jarred roasted red bell pepper
  • 1 clove garlic, finely chopped
  • 1/2 tsp. lemon zest
  • 1/4 tsp. smoked paprika


In small skillet, whisk 2 tbsp. butter, the tomato paste and saffron over medium until fragrant, 3 to 4 minutes. In food processor, puree mixture with remaining ingredients and 1/4 tsp. salt. Refrigerate until firm. Serve with fish, potatoes and other vegetables, or stir into pasta.
