Romaine Wedge Caesar Salad

Ingredients

  • 1/2 cup EVOO
  • 4 tsp. red wine vinegar
  • 1 clove garlic, finely chopped
  • 1 generous tsp. anchovy paste
  • 1 tsp. Dijon mustard
  • 2 romaine hearts, halved lengthwise
  • 1/3 cup grated Parmesan
  • 3/4 cup store-bought croutons
  • Chopped fresh chives

Preparation

In bowl, whisk first 5 ingredients; season dressing. Drizzle romaine halves with dressing. Top with Parmesan, croutons and chives; season.
