- 1 lb. peeled, deveined tail-on raw large shrimp
- 2 tbsp. olive oil
- 1 tsp. lime zest plus 1 tbsp. juice
- 1/2 tsp. sugar
- 4 tsp. chopped fresh cilantro
- 2/3 cup chili sauce
- 1 tbsp. tequila
- 1/2 tsp. hot sauce, preferably Tabasco
On baking sheet, toss shrimp, oil, zest and sugar; season. Roast at 400° until opaque in the center, about 5 minutes; cool. Sprinkle with cilantro. In bowl, whisk lime juice and remaining ingredients for dip.
