Roasted Plums, Whipped Honey Ricotta & Granola

Ingredients

  • 3 firm plums, quartered and pitted
  • 7 tbsp. EVOO
  • 2 cups ricotta
  • 1 tbsp. honey
  • 1 tbsp. fresh lemon juice
  • 1/2 cup granola

Preparation

In small baking dish, drizzle plums with 3 tbsp. EVOO; season. Bake at 425°, turning once, until tender, about 12 minutes. In bowl, whisk ricotta, honey, lemon juice, 2 tbsp. water and remaining EVOO until creamy. On plate, layer ricotta, plums, then granola.
