  • In medium bowl, mix lime juice, oil, sugar, fish sauce, and ginger for vinaigrette. In large bowl, marinate pork in 1/4 cup of vinaigrette for 30 minutes. On foil-lined baking sheet, roast pork at 475°, turning once, until browned and cooked through, about 25 minutes. Stir peanuts into remaining vinaigrette. Slice pork. Top with vinaigrette and herbs.
