Roast Chicken with Lemony Broccoli Slaw

  • 1 bunch broccoli, stems trimmed and peeled
  • 2 carrots, peeled
  • 1/3 cup buttermilk
  • 1/3 cup mayonnaise
  • 1 lemon, zested (about 1 tbsp.) and juiced (about 3 tbsp.)
  • 1 rotisserie chicken (1 1/4 lbs.), cut into 8 pieces
  • 2 tablespoons capers, drained


In a food processor fitted with the shredding disk, grate the broccoli florets and stems and the carrots.

In a large bowl, whisk the buttermilk, mayonnaise and lemon juice. Add the broccoli and carrots; toss to coat and season with salt and pepper.

Divide the chicken and the broccoli slaw among plates. Sprinkle the slaw with the capers and lemon zest.
