Who knew a deep-fried dessert could be so elegant?
In bowl, whisk ricotta, milk, eggs, sugar, 1 tbsp. orange zest, and 1/4 tsp. salt. Whisk in flour and baking powder. In pot, heat 2 inches of oil over medium until shimmering. Working in batches, drop 2 tbsp. of batter for each fritter into hot oil. Fry, turning once, until deep golden, about 8 minutes. Drain fritters on paper towels. In saucepan, warm maple syrup with cinnamon over medium. Drizzle over fritters. Garnish with orange zest.
