Reuben-Stuffed Potatoes

Ingredients
- 4 potatoes, poked with fork
- 2 tablespoons butter
- 4 ounces corned beef, chopped
- 3 tablespoons thousand island dressing
- 1 cup sauerfraut
- 4 ounces sliced swiss
- Parsley
Preparation
Preheat oven to 425 degrees . Microwave potatoes on high 10 minutes. Turn; cook 7 minutes. Cut off top third of potatoes; scoop out flesh. Mash with butter; return to potato shells. Top with rest of ingredients. Bake 10 minutes.
