Red Curry Shrimp Linguine

  • 3 tbsp. olive oil

  • 12 oz. peeled, deveined medium shrimp

  • 3 cloves garlic, finely chopped

  • 1/2 fresh Thai chile, finely chopped

  • 10 oz. linguine, cooked, plus 3/4 cup of cooking water

  • 6 tbsp. butter

  • 2 tsp. Thai red curry paste

  • Chopped fresh cilantro, for garnish


In skillet, heat oil over medium. Add shrimp; cook until starting to brown, about 2 minutes. Turn shrimp over. Add garlic and chile; cook, stirring often, until fragrant, about 2 minutes. Whisk in pasta cooking water, butter, and curry paste. Toss with pasta. Sprinkle with cilantro.
