Preheat grill to medium. Rub mushrooms with 1 tbsp. oil; season. Place on oiled grates and grill, turning once, until tender, 8 to 10 minutes. Cool, halve, and slice into 1/3-inch-thick strips. Toss mushrooms, fennel and fronds, tomatoes, remaining oil, the lemon juice, and vinegar in a large bowl; season. Garnish with parsley.
