  • Preheat oven to 400°. Slice baguette diagonally into 1/2-inch-thick slices; place on a baking sheet and brush with EVOO. Toast until lightly golden, about 5 minutes.

  • In a medium bowl, combine ricotta with 1 tbsp. honey, the pepper, and a few pinches of salt. Whisk until ricotta is smooth, about 1 minute.

  • Spread ricotta mixture onto crostini. Top with grapefruit and drizzle with remaining 2 tbsp. honey. Sprinkle with thyme leaves, flaked salt, and more pepper.
