Ravioli Salad

Ingredients
- 13 ounces frozen mini ravioli
- 1 red bell pepper, chopped
- 1 small red onion, sliced
- 1/4 cup sliced basil
- 1/4 cup toasted pumpkin seeds
- 1 tablespoon balsamic
- 1 tablespoon lemon juice
- 1/4 cup EVOO
- Salt and pepper
Preparation
Thaw ravioli in warm tap water, 2 minutes; drain. Toss with pepper, onion, basil, seeds and dressing (balsamic, lemon juice, EVOO, salt and pepper).
