- Green Cabbage Coleslaw
- 1 shredded small head radicchio
- 1 cup julienned jicama
- 1/3 cup dried currants
- 1/3 cup crumbled blue cheese
- 1/3 cup chopped toasted walnuts
- 1/3 cup snipped chives
Cook Green Cabbage Coleslaw.
Omit the carrots and caraway seeds and replace with 1 shredded small head radicchio and 1 cup julienned jicama. When making the dressing, omit the garlic. Stir in 1/3 cup each dried currants, crumbled blue cheese, chopped toasted walnuts and snipped chives.
