Ingredients

  • 1 cup quinoa, rinsed
  • 1/4 cup lemon juice
  • 3 tablespoons EVOO
  • 1/2 teaspoon ground allspice
  • 1 cup diced cucumber
  • 1 cup chopped tomato
  • 3/4 cup mint, minced
  • 5 radishes, diced
  • 4 scallions, sliced

Preparation

Cook quinoa in boiling salted water until tender, about 12 minutes; drain. In bowl, whisk lemon juice, EVOO and allspice. Toss in quinoa and remaining ingredients; season.
