- 2 cups soy milk
- 1 cup tricolor or white quinoa, rinsed
- 2 tablespoons (packed) light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- Assorted fresh berries
- Maple syrup
In saucepan, bring milk, quinoa and 1/4 tsp. salt to a boil. Cover, reduce heat to low and simmer until milk is absorbed, 15 minutes. Stir in sugar and spices. Top with berries and maple syrup.
