Quick-Pickled Shrimp with Curry Mayo

Ingredients

  • 1 pound cooked and peeled shrimp
  • 1/3 cup white wine vinegar
  • 1/3 cup olive oil
  • 1/2 jalapeno, thinly sliced
  • 2/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon grated garlic
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon lime zest plus 1 1/2 tsp. juice

Preparation

In large bowl, toss shrimp with vinegar, oil and jalapeno; chill 20 minutes. Meanwhile, in small bowl, whisk remaining ingredients. Drain shrimp; season and serve with dip.
