Quick Brandied Cherries

  • 1/2 cup water
  • 1/2 cup packed, light brown sugar
  • 1 3-inch strip lemon zest
  • 3 whole cardamom pods
  • 4 whole allspice berries
  • Pinch of salt
  • 1 pound frozen bing cherries
  • 1/4 cup brandy
  • 1 teaspoon pure vanilla extract


In medium saucepan, simmer water, (packed) light brown sugar, lemon zest, cardamom pods, allspice berries and salt over medium heat for 5 minutes. Remove from heat and add cherries, brandy and pure vanilla extract. Let cool, transfer to jar, then cover and refrigerate for at least 2 days. (Keeps in refrigerator up to 2 months.) Use in cocktails or serve over ice cream.
