Quick Apple Sauce

  • Mild cooking apples, such as Crispin, cored and thickly sliced
  • Tart apples, such as Winesap, cored and thickly sliced
  • Lemon juice
  • Ground cinnamon
  • Maple syrup


In a saucepan, simmer 2 parts mild cooking apples to 1 part tart apples for 25 to 30 minutes, covered, with a little water, lemon juice and a dash cinnamon. Sweeten with maple syrup to taste. Puree in a food processor or blender.
