- 1 loaf (1 lb.) rustic bread, cut into 3/4-inch cubes
- 1/4 cup grated pecorino
- 2 tablespoons olive oil
- 1/2 teaspoon pumpkin spice
In a large bowl, toss all the ingredients with 1 tsp. salt and 1/2 tsp. pepper. Transfer to a large rimmed baking sheet. Bake at 400°, turning occasionally, until the croutons are golden and crispy, about 18 minutes.
