Goat Cheese & Prosciutto Stuffed Chicken Breasts with Roasted Grapes

Ingredients

  • 4 oz. fresh goat cheese

  • 4 thin slices prosciutto, chopped

  • 2 cloves garlic, finely chopped

  • 1 tsp. herbes de Provence

  • 4 boneless, skin-on chicken breasts (8 oz. each)

  • 2 tbsp. olive oil

  • 1 1/4 lb. grapes, separated into small clusters

Preparation

In bowl, mix first 4 ingredients. Slice horizontal pocket into each chicken breast; season. Stuff with cheese mixture. On baking sheet, drizzle chicken with oil; season. Bake at 475° for 10 minutes. Add grapes. Bake until chicken is cooked through, 10 minutes. Transfer chicken and grapes to plates. Add 1/4 cup water to pan drippings in baking sheet; scrape up any browned bits from bottom of sheet. Spoon sauce over chicken.
