Prosciutto & Pesto Pizza with Cottage Cheese & Arugula

If you have 20 minutes, you have time to throw together this easy and delicious pizza.

  • 2 tbsp. plus 1 tsp. olive oil

  • 1 lb. pizza dough

  • 1/2 cup Pecorino Romano

  • 3/4 cup cottage cheese

  • 1/2 cup refrigerated pesto

  • 8 slices prosciutto, torn

  • 1 cup arugula

  • 1 tsp. fresh lemon juice


Brush large baking sheet with 1 tbsp. oil. Stretch dough into large oval. Brush dough with 1 tbsp. oil; sprinkle with Pecorino. Bake at 450° until crust is browned, 8 to 10 minutes. Top with dollops of cottage cheese and pesto, leaving 1-inch border. Top with prosciutto. In bowl, toss arugula with lemon juice and remaining 1 tsp. oil. Scatter arugula over pizza. Season.
