Brush large baking sheet with 1 tbsp. oil. Stretch dough into large oval. Brush dough with 1 tbsp. oil; sprinkle with Pecorino. Bake at 450° until crust is browned, 8 to 10 minutes. Top with dollops of cottage cheese and pesto, leaving 1-inch border. Top with prosciutto. In bowl, toss arugula with lemon juice and remaining 1 tsp. oil. Scatter arugula over pizza. Season.
