  • In a large saucepan, bring 4 cups salted water and 1 pound quartered small red potatoes to a boil. Cook until crisp tender, about 5 minutes; drain and let cool. Meanwhile, slice 1/2 pound smoked turkey breast, 6 ounces gruyere cheese and 3 ribs celery into matchsticks. In a large bowl, combine 3/4 cup mayonnaise, 1/4 cup chopped fresh dill and 1 tablespoon Dijon mustard. Add the potatoes, turkey, cheese and celery and toss. Stir in 1 chopped granny smith apple. Top with dill sprigs.
