Pork Chops with Mango Salsa

  • 1 cup diced mango

  • 1/4 cup chopped red onion

  • 2 tbsp. finely chopped fresh cilantro

  • 2 tbsp. fresh lime juice

  • 1 tbsp. vegetable oil 

  • 2 bone-in pork chops (1 inch thick; about 10 oz. each)

  • 1/4 cup soy sauce

  • 2 tbsp. rice wine vinegar

  • 1 tsp. chopped garlic


In small bowl, toss first 4 ingredients; season salsa. In skillet, heat oil over medium-high. Cook seasoned chops until cooked through, about 4 minutes per side. Add soy sauce, vinegar, and garlic. Cook, basting chops with liquid in pan, until chops are coated and sauce thickens, about 1 minute. Serve with salsa.
