  • 4 large ruby red grapefruits, segmented
  • 3/4 cup pomegranate seeds
  • 3 tablespoons chopped mint
  • 1 teaspoon grated peeled fresh ginger
  • 3 cups diced pound cake
  • 2 cups coconut yogurt


In bowl, toss grapefruit, pomegranate seeds, mint and ginger. In short glasses, layer cake, yogurt and fruit mixture.
