- 4 large ruby red grapefruits, segmented
- 3/4 cup pomegranate seeds
- 3 tablespoons chopped mint
- 1 teaspoon grated peeled fresh ginger
- 3 cups diced pound cake
- 2 cups coconut yogurt
In bowl, toss grapefruit, pomegranate seeds, mint and ginger. In short glasses, layer cake, yogurt and fruit mixture.
