Plum & Raspberry Salad

Ingredients

  • 3 tbsp. red wine vinegar

  • 2 tbsp. olive oil

  • 1 tsp. Dijon mustard

  • 1 tsp. honey

  • 4 cups mixed greens

  • 1 plum, cut into thin wedges

  • 1/2 cup raspberries

  • 1/2 cup toasted walnuts, roughly chopped

  • 1/2 cup ricotta

Preparation

In large bowl, whisk first 4 ingredients; season vinaigrette. Toss with greens and half of plum slices; season. Top with remaining plum slices, berries, and walnuts. Dollop with ricotta.
