Plum & Goat Cheese Carpaccio with Mint

  • 2 pounds plums, preferably assorted colors, pitted and very thinly sliced into rounds
  • 8 ounces goat cheese, crumbled
  • 1 tablespoon finely chopped shallot
  • Small fresh mint leaves
  • EVOO and honey, for drizzling
  • Flaky sea salt, for garnish


Place the plums on a platter and sprinkle with the cheese, shallot and mint. Drizzle with the EVOO and honey. Season with the sea salt and some black pepper.
