Pineapple Punch

This cocktail is everything you're craving on a hot day. Garnish with a whole pineapple spear for an extra wow-factor.

  • 3/4 cup sugar 

  • 1/4 cup chopped fresh pineapple, plus 6 pineapple spears

  • 1/4 cup fresh mint leaves, plus 6 sprigs

  • 1 bottle (750 milliliters) white wine

  • 2 cups club soda

  • 2 cups ice


In saucepan, mix sugar, chopped pineapple, 1/4 cup mint, 1 cup water, and pinch of salt over medium. Stir until sugar dissolves, about 5 minutes. Remove from heat; let steep for 5 minutes. Strain into pitcher. Stir in wine, club soda, and ice. Divide among 6 glasses. Garnish with pineapple spears and mint sprigs.
