Pistachio-Arugula Pesto Sauce

Ingredients

  • 1/4 cup fresh orange juice
  • 1/4 cup EVOO
  • 1/4 cup grated Parmesan
  • 3 teaspoons orange zest
  • 2 1/2 cups baby arugula
  • 1/2 cup shelled pistachios
  • 4 grilled salmon fillets (about 1 lb.)

Preparation

In blender, puree first 4 ingredients. Add arugula and pistachios; blend until coarse pesto forms. Season with salt and pepper. Spoon over grilled fish.
